The Best Cake in the World

 

Last month, a friend asked me to draw this little illustration as a gift for her boyfriend and we decided to pair it with one of the best homemade cake recipes I know. The first time you make it, it will take a bit of time because the sourdough process is a 10-day endeavor (super easy, don’t worry). But, once you have the sourdough (that serves 3 cakes + 1 new sourdough), you will be ready to bake a delicious treat. Here’s the recipe:

Preparation in 2 parts

 

Sourdough

 

Day 0

(only the first time you make the sourdough. The following times, use a portion of sourdough as the base and start directly on Day 1):

  • 1 cup of wheat flour
  • 1 cup of milk
  • 1/2 cup of sugar
  • 1/2 packet of dry yeast

Mix everything.
 

Day 1

Add and let it rest without mixing:

  • 1 cup of sugar
  • 1 cup of flour

 

Day 2

Mix.
 

Day 3 and Day 4

Let it rest.
 

Day 5

Add and let it rest without mixing:

  • 1 cup of milk
  • 1 cup of sugar
  • 1 cup of flour

 

Day 6

Mix.
 

Day 7, Day 8, and Day 9

Let it rest.
 

Day 10

Separate into 4 equal parts. Each one can be used to make a cake. Save one to start the sourdough when you want to make more. The sourdough portions can be frozen.

 

Cake

 

Ingredients

     

  • 1 portion of sourdough
  • 2 eggs
  • 1 cup of brown sugar
  • 1 cup of oil
  • 1 cup of milk
  • 1 packet of dry yeast
  • 2 cups of flour
  • 1 chopped apple
  • 1 tablespoon of cinnamon
  • Zest of 1 orange and 1 lemon
  • A pinch of salt
  • 1/2 cup of chopped walnuts
  • 1/2 cup of raisins
  • Optional: 1 splash of vanilla essence

 

Mix the ingredients in this order until everything is well integrated.

 

Tip #1: Separate the egg whites and beat them separately, then add them at the end for extra fluffiness.

Tip #2: Dust the walnuts and raisins with a bit of flour and add them just before pouring the mixture into the mold to prevent them from sinking to the bottom.

 

Bake at 180ºC for 60-80 minutes. If after 50-60 minutes it starts to brown, cover with aluminum foil and continue baking until a toothpick inserted comes out clean.
